Bake the beginning...

After a few weeks of going MIA and missing on the comments, I am back to announce the results of the beginning of our bakery that I had discussed a month back.

Our bakery idea goes like this. My friend Teresa has recently turned vegan (which means a strict vegetarian who does not eat animal, eggs and dairy) and she finds it difficult to find bread or cakes that does not contain eggs and milk. So she decided to bake vegan desserts for herself and she thought of me as she knows that I love baking and have been trying out recipes of my own. For me I am more interested in healthy desserts (if there is such a thing) using less sugar that will be suitable for diabetics because my grandma and mom suffers from diabetes and they had to give up desserts because of the condition. I am also interested in gluten-free and wheat-free products that is suitable for celiacs. After discussion, the bakery idea is born.

After a few weeks of intensive baking, we came up with a few successful products that received the thumbs up from our testers (family, friends and colleagues).



Teresa is doing mostly sweets like cookies, mini baked donuts and cupcakes while I am going for muffins, loafs and breads. She is getting more success while I am facing some trouble as I am still adjusting to the gluten free flours which is quite difficult to handle. Hopefully I will adjust to the flours soon. All our products are baked without eggs and milk. Only thing that I am not happy about is our muffins and cupcakes did not really puffed up as much as I'd like them to. Hopefully one day we will be able to make them all puffed up like those yummy looking cupcakes that RenRen makes. We are also trying to be as organic as possible.

Meanwhile I had a great time today at Teresa's house baking cupcakes with her and her daughter. Her daughter is very cute and she is one of our testers as well to see how the recipe goes with younger kids.
