Hey Guys,

Sorry for my absence I've been out and about and doing stuff that bartenders normally do haha I've always been a big fan of the great classics so today im going to show you one of my favourites and then a twist on it =P
One of my favorite spirits has always been tequila either on the rocks, shooted, eye balled haha either way its a fantastic spirit, and here is a great drink made from tequilla:
El Diablo:
60mls anejo tequila (aged tequila)
12mls creme de casis
2-3 lime wedges
ginger ale

Stir tequila and creme de cassis over ice in a chilled collins glass. Fill with ginger ale, squeeze in the lime wedge's juice and drop in the spent shell.

Now here is my Version of the drink. I call it the toasted diablo, reason for the name is that i actually toast/grill/char the citrus fruit in the drink.

By doing so, my citrus fruits DNA structure is changed through the process of charring, hence giving such citrus' like lemon lime and oranges a more sweeter and smokier taste

I now follow the original recipe:
El Diablo:
60mls anejo tequila (aged tequila)
12mls creme de casis
2pc charred lemon
2pc charred orange
2pc charred lime
ginger ale

But this time i muddled the charred fruites first, then i add my tequila, topped up with ginger ale. then i crown the top with creme de casis and granish with a orange twist.
This drink is great for all ocassions, you can even see the specs of burn fruit in the drink enjoy I love playing with fire!

hmm.. you're asking me to mix fire with alchol. i'm still trying to make the pearl martini, lol. it looks yummy though.
