My First Apple Streusel Coffee Cake

Since the stock market closes at 10 am (1pm eastern) time tomorrow (yay!), our office decided to have a breakfast potluck. In an effort to save money, I decided to bake an apple streusel coffee cake with ingredients that I already had at home. It was my first attempt in baking coffee cake and luckily it turned out okay. The outer layer looks a little burnt because I over greased the pan with butter, but the inside is very moist. I think I should have put the apples and streusel mix on the bottom of the pan when I baked it because when I flipped it over the streusel was on the bottom. It looks a little weird. Oh well...my dad likes it. I hope my coworkers like it too.

You see...very moist inside.

The Recipe:

Preheat over to 350 degrees

In a medium size bowl mix with a fork until crumbly and blended well:
1 cup brown sugar
3/4 cup all purpose flour
1/2 cup cold butter
2 tspn of ground cinnamon
Then stir in 1/2 of chopped pecans

In another medium size bowl mix:
3 cups of all purpose flour
1 1/2 tspn baking powder
3/4 tspn baking soda

chop into small pieces 3 granny smith or golden delicious apples

In a large mixing bowl beat with electric mixer on medium high until light and fluffy:
3/4 cup of butter
1 1/4 cup of granulated sugar
Beat in 3 eggs one at a time
Beat in 2 tspn of vanilla extract and 3 cups of vanilla yogurt
Then on low speed, beat in flour mixture just until blended

Spoon in about 3 1/2 cups of batter into a tube pan or bundt cake pan, sprinkle 1/2 cup of streusel, then layer the apple pieces, then sprinkle another 1/2 cup of streusel mixture. Press the streusel down into the batter lightly. Bake for one hour or until toothpick test comes out clean.

I've got all those ingredients. Hm, maybe a little baking this weekend. No pecans though bc of nut allergy in the house.

How's your allergy coming along anyways? Got some Alegra or whatever?

Super straight forward and blunt. I'm the friend that tells you that you look like sh*t at the end of a long day at work (and then I help you fix your hair). I can be pretty intimidating, but everyone around me knows that I'm one of the nicest people they'll ever meet. I can talk to anyone, anywhere, on just about anything that comes to my mind at the moment. I'm a Cancer so I can get along with practically anyone. At this moment in life, I can say that the smartest decision I ever made was to study abroad in Hong Kong, where all I did was shop, eat, party, and travel for a year (but don't tell my parents that). I'm super addicted to girly books (I love Sophie Kinsella) and was recently tricked into reading my first romance novel(it's like porn on books). I truly believe that I am destined to be a photographer, food critic, or an event planner, but somehow landed in banking and finance. I'm an impulsive shopper (last year I bought a PSP and now it's just sitting on my book shelf). I have a passion for food and I love trying new restaurants. I once told a friend "if we weren't working together we would never be friends because you can't eat garlic." My friends appreciate food. For some odd reason (I still haven't figured out what) I have the shortest attention span when it comes to the guys I date. I can be staring at my cell phone when it rings, but I'll never pick it up. I'm addicted to buying Chinese DVDs. I'm allergic to lychee, but I eat it anyways. I can't stand pretentious people, I rather respect you for your b*tchy a**hole selves. I learned how to read and speak Mandarin by watching tv. I once told a Congressmen to get off my seat at a conference in capitol hill. I'm not on facebook.

Update 8/17/2007...just kidding...I'm on facebook now.
